When In Doubt, Use Tortillas

Being a single parent, the sole money earner in the home and a full-time college student I don’t have a lot of time. That’s why sometimes, not always, I find it a necessity to cook quick and/or easy meals that don’t require a lot of time or effort. That’s not to say that I am not conscious of what I feed my child, or that I will feed him anything that is quick and easy. I do try to make sure he eats healthy.

One thing that I have learned that you can’t go wrong with is using  tortillas. You can make so many things with tortillas, and tortillas are actually pretty good for you. They also don’t cost a lot, which is one of the best reasons to use them. The only brand we use is Mission, though. I don’t recall ever using a different brand or even if there is one.

On their website, you can find Mission – Back To School recipes that your child can even take to school in his or her lunch back and will probably love. My son likes stuff like burritos, tacos, chicken wraps, vegetable wraps.. and I can even make a pizza wrap with the tortillas that he absolutely loves.

I like that they are so versatile and can be used in so many different ways, be it for lunch, dinner or just a snack. I also like the fact that Mission flour tortillas contain no trans fat per serving and are completely cholesterol free. Not just any foods can boast that.

Avoid Diaper Rash

When my son was in diapers, one of my biggest concerns was diaper rash. I think I was almost obsessive-compulsive about the whole thing. I made sure that he never went around with a wet or dirty diaper, or at least did my very best to make sure. I think in the 2 1/2 years he was in diapers and pull-ups he had a slight diaper rash only once and it was because he had diarrhea and it irritated his skin.

The name sounds kind of funny, I think, but from what I’ve read about it and what I’ve seen from my cousin’s personal experiences the stuff really works. Well needless to say, she was impressed and purchased a large 16 oz. jar of the stuff.

The paste comes in various sizes, though, not just large. You can get it in 1,2,3 and 4 oz tubes or you can buy the 16 oz. jar. The stuff treats diaper rash quite well and also helps smooth the skin irritation. I think if you’ve got small children that are still in diapers you should definitely give this stuff a try. Vacationing In Comfort

Back when hurricane Ike hit, I learned the hard way that vacation rentals were a lot more convenient and cost friendly than renting a hotel. My whole family had to evacuate to another city for nearly 2 weeks, and for the first few days we all stayed in several different hotel rooms, but then wised up and rented a vacation home to stay in for the duration of the time. It was a lot more comfortable after that.

That’s probably why if we ever decide to take that trip to North Carolina that everyone’s been talking about for ages, we’d choose a vacation rental over a hotel. Been there, done that. Being that this is something that we’ve been discussing and thinking about for a long time, I’ve actually done my share of research and usually I end up favoring Outer Banks vacation rentals when it comes to vacation rentals. Reason being that the Carolina Designs are so beautiful, huge and have just about everything any family can ask for while on vacation.

An example of a great vacation rental would be the #023 – Seahawk. This particular unit has caught my eye because it has some awesome amenities, and enough room for a really large group. With 2 king size beds, a queen, 2 twins, a pyramid bunk and a futon, not to mention 4 1/2 bathrooms, there’s plenty of space in this home. One of my favorite things about it, though, isn’t the space but the fact that it has a private swimming pool and a pool table. There are also 10 TVs, a video library, sports bar, wet bar, xbox, grill and even baby accessories like a pack n play and a high chair. Oh, and free broadband internet, can’t forget that.

By the way, let’s not forget the reason to vacation in North Carolina in the first place… the beautiful beaches.
