Bacon Cheeseburger Roll-Ups

Eric had his Mini Gourmet cooking class again today. This time they made these things called Bacon Cheeseburger Roll-ups. They are really yummy and easy to make. He didn’t remember the recipe exactly, but he told me they got it off the Kraft website, so I went and found it myself so I could share it.

Ingredients:

* 1 lb. lean ground beef
* 4 slices OSCAR MAYER Bacon, chopped
* 1/2 cup chopped onions (about 1 small)
* 1/2 lb. (8 oz.) VELVEETA Pasteurized Prepared Cheese Product, cut into 1/2-inch cubes
* 1 pkg. (13.8 oz.) refrigerated pizza crust

# PREHEAT oven to 400°F. Cook ground beef, bacon and onions in large skillet on medium-high heat until ground beef is evenly browned, stirring occasionally. Drain; return meat mixture to skillet. Add VELVEETA; cook until completely melted, stirring frequently. Cool 10 min.
# UNROLL pizza dough onto baking sheet sprayed with cooking spray. Press into 15×8-inch rectangle. Top evenly with meat mixture. Roll up dough, starting at one of the long sides. Rearrange, if necessary, so roll is seam-side down on baking sheet.
# BAKE 20 to 25 min. or until golden brown. Cut diagonally into six slices to serve.

He’s so proud of himself! He loves the fact that he gets to cook and bring home the things he makes to share with me. He even asked if he could make this for dinner for us one night. I think I’ll let him, but of course, with tons of supervision.

Dinner And A Movie?

As I said previously, my kiddo had his first Mini Gourmet cooking class at the community center yesterday. They all made pizza pockets. He was so proud of himself, and he saved me one of the pizza pockets he made so I could taste it. When I picked him up he was going on and on about how much fun he had, and how he got to do everything himself. I must admit, the pizza pocket was delicious and I was quite impressed. He said he would type out the recipe for me and print it out. When he does I’ll throw it up here for anyone who’s interested.

So last night we also watched The Spiderwick Chronicles. I’m usually not a fan of movies like that.. I’m not into the whole fantasy thing. Fairies, trolls, and goblin movies usually don’t interest me at all and I almost always find them to be incredibly cheesey. However, this movie was really good. I liked it alot, actually, and I know Eric did too. It’s kind of gross at times, what with goblins and green ooze for blood and all that mess. There was really only one part I found to be a bit cheesey and that was at the end. I won’t say what it was, but I’m sure anyone who watches it or has seen it will know what I’m talking about.

Time Flies When You’re Having Fun

The kiddo is at his first ever “Mini Gourmet” cooking class. It’s this class I enrolled him in at the beginning of the summer. It lasts for 2 hours. I gave him some money for the soda and snack machine as well as his rec room card so if he wants to stay up there after the class is over and play some games or whatever he can. Anyway, we were almost late for the class. I woke up early this morning, but I woke up sick. My throat hurts terribly and I’ve lost my voice. I was coughing up blood this morning, but I’m sure it’s just from my throat. I decided since it was really early I’d go back to bed for a few, thinking I’d wake up in time. And I did wake up in time, barely. Nonetheless he made it there in time and hopefully he’s having great fun. That’s what it’s all about anyway. It’s summer time and I want him to have fun.

Last week I took him and his friend to the rec center (or community center) to play some games and stuff and they ended up staying for hours. He had alot of fun then apparently. There’s lots of fun stuff for the kids to do there, and there’s also a gym and a nature center. I also took him and his friend on Friday night to play Pizza Bingo up there. The kids got to play bingo and eat pizza, which was pretty cool. They had a good time. :)

I’ve been sticking to the reading thing for the most part. He’s currently reading book 2 of The Chronicles of Narnia. He seems to be enjoying it. Tonight is also our “movie night” and I’ve gotten the Spiderwick Chronicles from Netflix. Eric picked that out, lol. Hopefully it’s good.

I really can’t believe he’s already half way through his summer vacation. I’ve got to start school clothes shopping soon and getting all of his needed supplies for 3rd grade. I just can’t believe it, 3rd grade!!! I’m actually going to be selling some of his old stuff on eBay I think. He’s got a pair of Van’s from last year that he wore once, and they are still basically brand new. He’s also got a winter coat that he wore twice. It’s Texas, it usually doesn’t get that cold here so he mostly wears hoodies and what not. But yeah, I guess I should start going through his old stuff. What fun.

Science Class Is Canceled

So I called the Community Center where Eric would have been taking his science class tomorrow and every Wednesday this month, and was informed that the class had been canceled because there were not enough children enrolled for the month of July. The June and August classes were full though, which really sucks. She said she had tried to call but didn’t have a good number. This is because I recently switched cell phone companies and forgot to inform them of the new number. I called Eric at my mom’s and he asked if he could stay one more night over there then, since he didn’t have the class tomorrow. I said yes, though I miss him terribly, he’s having a good time over there. I am kind of annoyed by the whole situation, but it is my fault for not informing them of the new number. Otherwise they might have been able to get him in on one of the other sessions. He’s still on for the Mini Gourmet cooking classes though. He’s excited about that.

I decided that since he wasn’t able to take the science class I would use the money they are refunding me and buy him and his friend a pass to their game room and skate park. With passes to the game room, they have access to the gym also. I figure I could take him up there for a couple of hours.. maybe 2 or 3 times a week. He might enjoy himself, and make some new friends. I also plan on taking him to the skate park they have and the playground a few times this coming month. He’s also got his swimming lessons starting July 21st.

I’ve also decided that since he hasn’t been reading as much this summer as I’d like, that I’m going to set aside one hour every evening for us both to dedicate to reading. I personally believe that reading is a vital element in any child’s education and the learning process in general. It keeps your mind sharp and helps children learn to absorb and process information quicker. He’s got some really awesome books to keep him busy and we also just ordered him an Encyclopedia Brown box set from Amazon.com. Right now he’s currently in the middle of book one in the Chronicles Of Narnia series.

Quickie

Earlier I dropped Eric off at the local community center for a field trip I signed him up for. I guess it’s a field trip. It’s basically an all day thing where the kids go to a petting zoo, a scavenger hunt, then to play mini golf. He’s never played mini golf before. I’m sure he’ll tell me all about it when I pick him up this afternoon though. It only cost $20.00 for the day and they provide the children with lunch and a snack, so it’s really not a bad deal. I figured it was something he would like to do. In July he has the mini gourmet children’s cooking classes and the mad scientist labs at the community center. I really like that place, lol. I think I mentioned in here before that I used to go there myself as a child. It was fun back then, but now it’s way nicer with a lot more fun things to do.

I need to remember to enroll him in swimming lessons in August.
