Eric went on a field trip Tuesday with his class. They went to a place called The Oil Ranch. It’s in Humble I think, which is kind of far. He came home so excited about the trip, telling me that he got to ride a horse and pet various animals. He said they let the children milk the cows too, but they weren’t ready for milking that day so the kids only got to brush the cows. They also all got to pick a pumpkin out of the ranch’s pumpkin patch. The pumpkins weren’t really huge. Eric carved his for Halloween, all by himself. We have this pumpkin carving kit that I purchased a couple of years ago. He even saved the seeds for my mom cause she roasts them or whatever. I haven’t taken a picture of the pumpkin yet, but I’ll post it up on the next post along with a picture of him in his Darth Vader costume.
Anyway, today is Field Day at my son’s school so I need to go make him a sack lunch. He’s been taking his lunch daily anyway as opposed to buying a hot lunch, but he usually takes it in a little insulated bag. He’d been getting a tummy ache at school nearly every day after lunch and I couldn’t figure out why. I think it’s either the crappy food or the fact that the only thing they serve the kids to drink is milk, unless they purchase a bottled water separately. Since he’s been taking his lunch, though, he hasn’t gotten a tummy ache at all. So I think I’ll stick to making his lunches everyday.

My kiddo likes doing stuff with me, and cooking is no exception. I like to find things that we can do together in the kitchen and one of the things I’ve found that he really likes to do is bake. It’s fun and relatively easy. Anyway, to make a short story even shorter, the other night I promised him we’d bake up some homemade chocolate chip cookies.

I’m diabetic so even though I love to bake goodies I can’t really eat very many of them. I did eat two cookies though, and they were yummy. They are best when warm so right after they were done I put some on a plate for Eric and gave him some milk to go along with it.

Anyway, I got the recipe several years ago from a bag of sugar of all things, and tweaked it a little bit to my liking. It’s fairly easy and doesn’t take alot of time to whip up a batch either. I’m starting a cooking/recipe blog soon and you’ll be able to find the recipe there if interested.

Being a single parent can sometimes be pretty stressful. I don’t get alot of time to relax, so when the opportunity comes up for me to get away, relax, or get a break then I’m all for it. That’s why when my good friend invited me over to check out the sauna that her husband bought for her as an early Christmas present I was all for it. She’s pregnant right now, but says after the baby is born she wants me to come over and try it out. To be perfectly honest I’ve only been in a sauna one time in my entire life, and that was when I went to a spa. It was so relaxing, I didn’t want to get out. Saunas are not only good for relaxation, but alot of people don’t know that they are good for helping you burn calories and lose weight. Some other benefits of a sauna include improved circulation, detoxification, pain relief and dkin purification. My friend Erica is so lucky to have her very own personal sauna. I would love to have one, but my apartment is rather small and there is simply no place for it. I was checking out some of the different saunas on CrystalSauna.Com. I didn’t know a sauna came with an AM/FM radio and Cd player. I think that’s really cool and you can even attach your MP3 player. I’m so jealous.
